After a full weekend of eating off plan, it was time to get back to eating the way that makes me feel the best. Lunch was sirloin steak, some leftover loaded cauliflower and a fresh salad made with hubby's homegrown butter lettuce. Berries and cream was perfect for dessert. 🇯🇵Receta de Anko🇯🇵 Tal y como me habeis pedido, aquí teneis la receta de anko 😉 💥Aviso💥 Si tenéis problemas para encontrar el azuki no tengais vergüenza en preguntar y os cuento cómo encontrarlo encantada🤗 🍚Ingredientes para 1 buen tupper🍚 - 200g #azuki (soja roja, judía roja...) - 60-70g azúcar (podéis probar otros edulcorantes, la cuestion es usar lo menos posible) - 1 pizca de sal fina - 700 ml agua para cocer 👩‍🍳Pasos🥢 1. Lavar el azuki, echar a una olla a presion sin tapa con agua (la que tenemos reservada no🙅‍♀️) y hervir. Cuando rompa a hervir escurrir y volver a echar en la olla. 2. Echamos 700 ml de agua (ahora si 👌) y hervimos cerrado desde que sube la presion 15 minutos a fuego medio-bajo. Despues 30 minutos a fuego mínimo. 3. Añadimos azúcar y sal. Cocinamos destapado a fuego medio hasta que vemos que se forma una pasta. Ojo que al enfriar se endurece y seca un poco mas❗ 4. Lo ponemos en un recipiente o tupper para que enfríe un poco antes de servir o guardar en la nevera. Es una forma genial y saciante de tomar proteína, fibra e hidratos complejos. Aunque por el azúcar no conviene abusar, realmente sacia lo bastante como para que con poco sientas que has comido bastante. Y por otra parte, la fibrá hará de las suyas para reducir la velocidad a la que se abrosve el azúcar 😜 ¿Con qué te lo tomarías? No-corn-syrup cloud marshmallows☁️ No corn syrup, sugary delicious marshmallows! ~35 calories per marshmallow, and this recipe makes 50 of them! These aren’t really diet food, since they’re basically all sugar (lol), but since they’re so airy and fluffy, you can still have quite a few and still be ok for your daily sugar intake😇 Hope you all enjoy! Ingredients: 2 tablespoons gelatin (2 envelopes Knox) 1 cup cold water, divided 2 cups granulated sugar 1/2 cup powdered sugar 1/2 teaspoon salt 1/2 teaspoon of vanilla extract A few tbsps cornstarch and powdered sugar mix for dusting PS: you need a candy thermometer for these! Recipe: Liberally dust a long pan (I used a sheet pan, but most pans will do, just know you might get tall marshmallows if it’s smaller) with cornstarch and powdered sugar. In a bowl, mix the two packets of gelatin with 1/2 cup of cold water. Leave it to set while you make a mixture, about 5-10 minutes. Dissolve granulated and powdered sugar in the other 1/2 cup of water over medium heat. Once dissolved, add the gelatin. Do not mix (it will dissolve on its own!), but bring to a boil until the mix reaches 220 F. The mixture will bubble up quickly, so be careful to remove it from heat so it doesn’t spill over. Pour the mixture into the bowl of an electric mixer. Stir in the salt and the vanilla extract. Best with the whisk attachment for 2 minutes on low, and then on high for about 10 minutes. The mixture should be white and fluffy at this point, like marshmallow fluff. Pour it into your dusted pan and smooth down with a spatula. The mix will be sticky, so be prepared! Dust the top with the powdered sugar and corn starch mix. Put in the fridge, uncovered, for at least 3 hours. Cut the marshmallow into 50 individual marshmallows, and dust individually so they do not stick together. What is quality food? Yesterday I talked about investing your calories in quality food but what does that mean? We have all heard, only shop the outer circle of the grocery store and stay out of the isles. Or only eat whole foods, things from the earth and with out a bar code. Even in just the outer ring of the store it gets confusing, there are vegetables and organic vegetables. Eggs and free range eggs. Organic meat and 100% organic meat, and then a whole list of things “made from organic ingredients” Don’t let these labels be a source of stress for you. If you can make it to your local farmers market and get things fresh from the family that grew them that’s great. If you are in the grocery store and don’t want to spend the extra money on the organic fruit then don’t, you are still getting fruit and that’s better than fast food. There is a lot of loop holes and fine print that go into all those labels. Find the products you like, and respond well to. Don’t let its status as free range or not, add stress to your grocery shopping trip.
