Dinner last night...chicken gyros!! So I let the chicken breasts marinate for about 6 hours in the fridge of course (in salt, pepper, Cajun seasoning, smoked paprika, garlic powder, onion powder and lime juice). Then I took that out, placed it on some a baking sheet with some foil, and baked it for about 25 minutes at 400, then finished it off in a sautee pan with butter and brown for a few minutes.
For the tzatziki sauce, in a bowl I just mixed together:
1 1/2 cup Greek yogurt
1/2 a cucumber (grated), 1 tsp red wine vinegar
2 tbsp extra virgin olive oil
1 tbsp lemon
2-3 tsp minced garlic cloves
1/4 tsp dried oregano
Salt and pepper to taste
I like to toast my pita bread with a drizzle of olive oil in a pan, but if you don’t you can just skip this step.
For toppings I sliced up some red onion and tomatoes. So pita, then chicken, tzatziki sauce, red onion, tomatoes and then a little bit of crumbled feta cheese on top! •
