Repost @tony_la_ferrara ..... Baci Perugina.... an iconic Italian chocolate brand famous all over the world. "Baci" means "kisses" in Italian. Each sweet kiss contains a message of love, affection and friendship wrapped around a decadent morsel of fine chocolate , chopped-hazelnut and crowned with a perfectly-toasted, crunchy whole hazelnut....creating a special combination that gives Baci Perugina its unique flavour and texture. Absolutely Devine!. The dark chocolate is my favourite "Bacio" ....but this time of the year you can also find them in two other delicious chocolate colours....White and Pink.....all of them equally decadent and addictive.
There 3 combinations of white chocolate, pink chocolate and the more traditional dark chocolate have inspired me to create this Three Colour Chocolate Mousse Cake. I think it looks absolutely fantastic....covered with chopped Baci Perugina.....I can assure you that the smooth silky texture of the white, pink and dark chocolate... combined with the crunchy hazelnuts make for a decadent luxurious dessert.
The base of the cake is a "chocolate Marquise" made without flour using only egg yolks, egg whites, bitter cocoa, powder sugar and potato starch.
The 3 layer mousse is made with dark chocolate for the bottom layer,
and white chocolate for the other two ( the mousse in the middle has natural red food colour). In addition, I used crème anglaise, whipped cream and gelatine to create the mousse.
Covered with chopped Baci... PRETTY DECADENT!!! There are too many steps in this recipe for me to post.... if you are interest send me a note and I will send it you.
